Amaury Guichon

Overview

Amaury Guichon is a French-Swiss pastry chef and chocolatier best known for creating chocolate and pastry sculptures so large and precise that many viewers assume the videos are fake. Guichon began training in pastry at age fourteen at a hotel school in France, then worked in bakeries and pastry shops in Switzerland and France, becoming an executive pastry chef in Paris by age 21. In 2016, he began posting videos of his work online, showing himself building towering chocolate sculptures, like a giraffe made entirely of chocolate, piece by piece out of tempered chocolate, and some of the videos reached tens of millions of views each. Because each sculpture has to support its own weight without cracking, sagging, or melting under studio lights, Guichon had to develop his own techniques for reinforcing chocolate, treating it less like a dessert ingredient and more like a building material. In 2019, he co-founded the Pastry Academy in Las Vegas, where he now trains students worldwide in the techniques behind his showpieces.

Why He Matters

Amaury Guichon's work reframed what chocolate could even be, showing that a material most people only think of as a candy could be engineered into freestanding sculptures taller than a person. Building at that scale forced him to solve problems no culinary training fully prepares you for, like distributing weight through a chocolate skeleton or keeping a delicate piece from collapsing mid-build, turning dessert-making into something closer to structural design. For young people, Guichon's path reminds us that mastering a craft's fundamentals (tempering, patience, precision) can eventually let you attempt something no one has built before.
